Description
Isoxanthohumol is the flavanone-closed form of Xanthohumol, formed when Xn-containing hops undergo wort boiling (60–90 min, 100 °C, pH ~5.2–5.6) or acidic storage — the chalcone C2′-O–C6′ bond closes to form the C-ring flavanone (C2-carbonyl). In finished beer, Iso is typically the major prenylated polyphenol (Xn residual <10–20% of total Xn+Iso), while raw hops / cold-processed nutra extract retain Xn-dominant.
